There are two traditional Easter cake which cannot be missed on any Italian Easter dining table: Colomba and Pastiera. Colomba has a dove shape topped with pearl sugar and almonds. This very popular easter cake was invented in Lombardy, probably in Milan, in the north of Italy. Pastiera is a Neapolitan tart, from the South of Italy. The two ingredients that make it unique are the cooked wheat and the extract of orange flowers. The orange flower water flavor is a celebration of the just started spring season. According to a popular ancient legend, during the night the fishermen’s wives left on the beach some baskets filled with ricotta cheese, candied fruit, wheat, eggs and orange flowers as offerings for the “Sea”, to bring back safely their husbands to their houses. In the morning, when the wives went back to meet their husbands, they noticed that during the night the waves had mixed the ingredients together and that in the baskets of their returning husbands there was a cake: the Pastiera. Besides this legend, it is said that it was a nun that invented the modern Pastiera in the XVI century, in an ancient Neapolitan convent: San Gregorio Armeno. She wanted to bake a cake that had the same perfume of the orange flowers, which grew in the convent’s garden. Another story refers that Maria Theresa of Austria, King Ferdinand II of Bourbon’s wife, accepted to taste a slice of Pastiera smiling for the first time in public after she eat it. La primavera è arrivata! Abbiamo aspettato tanto. Abbiamo camminato nei boschi a settembre, ci siamo goduti il foliage e i suoi caldi colori a novembre, abbiamo scartato (ed impacchettato!) regali a dicembre, abbiamo festeggiato il nuovo anno a gennaio e poi… Poi niente, abbiamo cominciato a contare i giorni, a guardare fuori, a misurare minuto per minuto come le ore di luce si stavano finalmente pianpianino allungando. Abbiamo sbuffato ad ogni giornata di nuvole e pioggia in più e avuto picchi di esaltazione alle prime giornate di sole. Poi, magicamente, è arrivato il verde. Il green. L’odore, del verde, ancora prima del suo colore. Quello che all’improvviso percepiamo come una sferzata di energia annusando l’aria uscendo le mattina presto al primo taglio del prato del giardino pubblico vicino casa. E poi quello che cominciamo a vedere intorno, negli stessi prati, o anche in giro, negli oggetti di tutti i giorni, negli utensili, nei capi d’abbigliamento. Siamo ufficialmente negli ultimi giorni di febbraio, ovvero, se la matematica non ci inganna, che fra un mese è primavera! Sbirciamo in alto oltre le nuvole grigie pregustando il sole e la brezza marzolina. Guardiamo l’orologio soddisfatti ogni pomeriggio e valutiamo che sì, le giornate si allungano sempre di più. La natura ci ricorda che sta per risvegliarsi, e lo fa attraverso la fioritura di uno degli alberi più belli e romantici: il mandorlo. La sua fioritura precede la comparsa delle foglie, ed i suoi fiori delicati sono in grado di resistere anche a temperature di pochi gradi. Narra la leggenda che l’eroe greco Acamante, in viaggio verso Troia, sostò per qualche giorno in Tracia. Qui conobbe la principessa Fillide di cui si innamorò subito e perdutamente. Acamante poi continuò il suo viaggio e andò in guerra. Fillide lo attese per dieci lunghi anni, fino a che, venuta a conoscenza della caduta di Troia, non vedendo alcuna nave tornare all’orizzonte, immaginò che l’amato fosse caduto e si lasciò morire di dolore. Così, la dea Atena, impietosita dalla struggente storia d’amore, tramutò quindi per pietà Fillide in un mandorlo. Ma Acamante non era morto, era solo stato trattenuto da un’avaria della sua nave. Quando seppe di Fillide, si recò nel luogo dove sorgeva l’albero e, colmo di amore e dolore, lo abbracciò. Fillide, in cambio di quell’abbraccio, fece spuntare piccoli fiori bianchi dai nudi rami. Ancora oggi, l’abbraccio fra i due innamorati è visibile in primavera, quando i rami dei mandorli fioriscono, a testimoniare l’amore eterno dei due giovani e la speranza della rinascita.
